How to light your Ashes to Ash's BBQ smoker

Lighting a charcoal BBQ smoker can be a straightforward process if done correctly.
Begin by selecting high-quality charcoal and placing it in the charcoal basket. 3/4 full basket plus a lit chimney = 9-10hrs cook time
Use a chimney starter for optimal results, filling it with charcoal and crumpling newspaper or using lighter cubes at the bottom. Light the newspaper and allow the charcoal to ignite, usually taking around 15-20 minutes.
Once the coals are ashy and glowing, carefully pour them into the smoker's charcoal basket, spreading them evenly and replacing the basket lid.
To maintain consistent heat, adjust the air vents to control airflow, set the lower vent to "start" and open the top exhaust fully.
When using wood chunks (3-4 pieces) for added flavor, place at different depths in the basket before adding hot coals.
Once you reach the desired cooking temperature close the lower vent to "run" and close the top exhaust allowing a 10-12mm air gap (1/2 inch). Then allow the smoker to normalize its temperature ready for cooking, (10 minutes generally).
Finally, place your meat on the rack and close the lid, ensuring you monitor the temperature throughout the cook for perfect smoking results.
